Making an easy veggie quiche recipe is something I never thought I would be able to do, yet, once I made this recipe I never looked back. You can make a quiche in a pan of any shape and still have delicious results.

You can use any shape pan when making this dish and the results will always be yummy. When making brunch for friends, I made a mixed vegetable quiche in a square pan and it was so easy to cut into squares for serving!

This egg dish is usually saved for weekend brunch or a holiday treat, but you can make this for a quick and easy weeknight dinner too.
When I make hard boiled eggs for the week, whether it's for easy deviled eggs or egg salad sandwich, I always reserve a few so I can make this easy veggie quiche.

Vegetable quiche ingredients
- 1 unbaked pie shell
(9-inch)
- 1 medium onion, chopped
- 1 cup chopped broccoli (optional)
- 1 cup chopped asparagus (optional)
- 1 cup fresh mushrooms (optional)
- ½ stick (4TBSP) butter
- ¼ cup grated parmesan cheese
- ¾ cup grated swiss cheese
- 3 eggs
- 1 ½ cup half and half
- 1 tsp. garlic salt
- 1 tsp. thyme
If at all possible, have fresh herbs when making a quiche. It really, really does make a difference.

How to make vegetable quiche
- Preheat oven to 350 degrees.
- Place unbaked pie shell in a square 8×8 baking dish or in 9-inch pie plate. Set aside.
- Melt butter in a non-stick frying pan
and sauté onions and mushrooms (optional) or any vegetable you decide to add and cook until soft. Add to the bottom of the pie shell.
- Sprinkle cheeses on top.
- In a bowl
, beat eggs; add half and half, add garlic salt & thyme and whisk well.
- Pour egg mixture into pie shell and bake in preheated oven for 40-45 minutes.
- Serve warm or cold. A nice green side salad goes great for brunch, lunch or dinner.
What to use instead of cream
If you want to make this a healthy veggie quiche, then you can skip the heavy cream and still have a fluffy and creamy quiche. I like to use half and half as a substitute because I normally do not have heavy cream in the fridge at all times.
Can this be a crustless vegetable quiche
Absolutely! If you want to make this a crustless quiche you can omit the pie crust all together. Be sure to grease your pan with a brush of oil or butter so that the quiche does not stick when removing from the pan. Bake quiche the same amount of time so that the egg mixture sets properly.
Can you freeze quiche
Yes! This quiche freezes really well, so make two while you're at it! Enjoy one now and freeze one for later. When quiche has cooled completely, cover with plastic wrap, then aluminum foil.
Place in the freezer for up to 3 months. To reheat frozen quiche, place in a preheated 350-degree oven and bake for 20-30 minutes.
