How to make Delicious French Onion Soup

When the temperature drops, it is time to pull out my easy French onion soup recipe. It is super simple to make and is full of rich, deep flavor from caramelized onions & beef stock that warms you up in no time.

This is a recipe that my husband likes to prepare and I’m not complaining! It’s enjoyable to tag-team side-by-side in the kitchen to make this restaurant classic.

We pour a glass of wine and talk about our day as I slice up onions, and he stirs them in the pot to caramelize them. 

What do I need to Make Easy French Onion Soup?

If you are able, invest in a Le Creuset Dutch Oven, I highly recommend it.  There are many on the market, but there is nothing that cooks food like a Le Creuset.

Yes, they are expensive and yes, it is an investment, but it will last you forever and once you take the first bite of whatever dish you’ve cooked in it, you will understand.

If you do not have a Dutch Oven, a nice soup/stock pot will do just fine, just make sure it has a lid. If it is stainless steel, be sure to adjust the heat to medium-high and then simmer, otherwise, your onions will fry instead of caramelizing.

You will also need butter, olive oil, salt, pepper, beef broth, onions, thyme, Swiss or Gruyère cheese and some delicious crusty bread.

How to Make French Onion Soup at Home?

Soup is a favorite meal in our house. It is hearty and makes you feel good, am I right?

You may be asking yourself “how do I cook french onion soup at home?” and I will tell you, it is a lot easier than you may think because we are all about easy!

From start to finish, this will take you about 30-45 minutes, which includes the time it takes to chop up all the onions.

*Time saver tip-slice up onions the night before and place in Ziplock bag in fridge.

Traditionally, a slice of bread will be placed on top of soup in a bowl, topped with cheese and broiled to melt the cheese.

We prefer to not go this extra step- we just place the grated cheese on top and keep the bread aside for dipping.

Easy French Onion Soup Recipe

Ingredients

  •  butter
  •  Olive oil
  • yellow or Vadalia onions, cut in half, then sliced
  • sugar
  • kosher salt
  • sprig of thyme (optional)
  • beef broth, or bone broth
  • sherry (optional)
  • grated Swiss or Gruyère cheese
  • French Baguette, sliced

Directions for easy onion soup

In a Dutch Oven like my favorite 5qt. Le Creuset or stockpot, melt butter and olive oil together over medium-high heat.

Next, grab a cutting board-(this is my favorite cutting board), chop onions in half, then slice.

Add onions and stir. Add salt and sugar. You may be asking why add these two spices now? Salt & sugar help to bring out the natural juices – this process is also called “sweating” and will draw out all the flavor!

Stir so that onions do not stick to the bottom of the pan. Continue to stir with a wooden spoon until onions start to turn golden brown. Turn heat to low and cover with a lid. Cook for 15 minutes.

Check periodically and stir (every 5 minutes) to ensure onions are not sticking and are starting to caramelize.

Add beef broth, sherry (optional) and thyme (optional).

Cover with lid and allow to simmer for 20 minutes. The longer this simmers, the more the flavor will deepen.

Ladle soup into soup crock or bowl.

Serve with a slice of rustic French Bread.

  • 4 Tbsp. butter
  • 2 Tbsp Olive oil
  • 2 lbs yellow or Vadalia onions cut in half, then sliced
  • tsp. sugar
  • tsp. kosher salt
  • sprig of thyme optional
  • 4 cups beef broth
  • 1/2 cup sherry optional
  • grated Swiss or Gruyère cheese
  • French Baguette sliced

Instructions
 

  • In a Dutch Oven or stock pot, melt butter and olive oil together over medium-high heat.
  • On cutting board, cut onions in half, then slice.
