I like mixing flavors with lemonade like this homemade orange lemonade recipe. I’ve also taken some liberties with strawberries too, like with this strawberry basil spritzer; so this just seemed like the perfect challenge to create a copycat recipe hack and add my own spin on things.
Strawberry Lemonade from Scratch? Yes! It’s Easy!
When the summer temps max out at “darn hot”, it’s a great time to pull out this copycat Red Robin Freckled Lemonade recipe. During the summer, I have zero desire to do anything in the kitchen requiring me to fire up the stove or oven. I cook a few recipes in my new Insta Pot (affiliate link!) but that takes mere minutes and is contained in one appliance- aka- there is no heat involved to make me sweat more than I have to. To keep the house somewhat cool, we tend to hit up local pizza joints and burger places and this is where the lemonade recipe comes into play. The local Red Robin serves up a drink called “Freckled Lemonade” and while tasty, it is really sweet. I like to have control over the sweetness of my lemonade or iced tea so I wanted to make a homemade version.

I will confess, this thyme-infused simple syrup is cooked on the stove, but it takes only minutes and in my book, that doesn’t really count. I love making this and keeping on hand in a mason jar . (affiliate link) It’s great in this strawberry lemonade, but it also tastes great in iced tea. Simple syrup really lives up to its name- simple. It’s a 1 to 1 ratio; simmer, cool and enjoy! I did 1 cup of sugar with 1 cup of water and 1 big sprig of fresh thyme from my patio garden. Cook the sprig in the sugar water to get all the fabulous flavor and then pluck it out before pouring into your jar. As you can see, I used mine in my glass, but you can toss it if you want. Save the jar in the fridge.

Strawberry Lemonade from Scratch
Strawberry and lemon come together with a thyme-infused simple syrup to make the most delicious lemonade you've sipped on the porch all summer.
- Simple Syrup:
- 1 cup sugar
- 1 cup water
- 1 sprig fresh thyme
- 1/4 cup simple syrup
- 1/4 cup sliced strawberries
- 1 lemon, juiced
- Simple Syrup:
- Combine sugar and water (and thyme if infusing) in small saucepan.
- Bring to simmer over medium-high heat. Turn off heat and let cool.
- Remove thyme sprig and pour into mason jar or container.
- Keep in fridge.
- Strawberry lemonade
- In 16oz. glass (pint glass) add 1/4 cup simple syrup
- Add 1/4 cup sliced fresh strawberries.
- Muddle to mix.
- Add lemon juice and stir.
- Add ice and then water to fill glass.
- Add thyme sprig and sliced strawberries.
