Easy cake mix cupcakes
I am obsessed with “soda cakes” because they are super easy and taste great. All you need is a box of your favorite white cake mix and your soft drink of choice.
You can even use the soda as a flavoring in a delicious cream cheese buttercream frosting!

Simple 7UP cucakes dessert
This year I am going to dress up my dining room server as a dessert buffet to have it ready at a moment's notice, and have easy-bake recipes like my 7UP & Cherry 7UP cupcakes.
The buffet doesn't even have to be super fancy. All it needs are a few holiday decor items to make it sparkly and festive.
- Tiered Tray decorated with holiday mugs, decorations, and hot chocolate
- A fun snowman or mini tree with evergreen and battery Christmas lights
- Cutting boards
- Festive serving tray with holiday plates and napkins

I love making easy desserts and nothing is easier than using a cake mix and soda. That is all you will need for this 7UP cupcakes recipe plus a few festive additions to brighten up this holiday dessert.

3 Holiday dessert tips:
- Set aside a space (like a small table or counter space) that you will use for food & beverage.
- Have plates & napkins set on the end of space for easy access
- Pre-bake items and place them in the freezer. If last-minute guests arrive, take out upon arrival and they will defrost in no time!

Holiday 7UP cupcakes ingredients
Use cherry 7UP to make these soda pop cupcakes and regular 7UP for a lemon lime cupcake frosting!
- 1 box white cake mix
- 1 bottle or can Cherry 7UP (measure out 12 oz.)
Frosting ingredients:
- ½ lb butter (2 sticks), room temperature
- 1 package cream cheese (8oz.), room temperature
- 1 lb. package confectioners’ sugar
- 1 tsp vanilla
- 2 Tbsp 7UP soda
How to make 7UP cupcakes
Start by preheating oven to 350 degrees.
Line a muffin tin with paper cupcake liners.

In large mixing bowl, combine box cake mix and 1 can (or measure out 12 oz.) Cherry 7UP.
DO NOT ADD ANYTHING ELSE TO THE CAKE MIX.
Pour cupcake batter into paper-lined muffin cake pans and bake for 20 minutes or until toothpick tests clean.
Cool 10 minutes in pan then turn out to wire rack to cool completely.
To make frosting from scratch:
In a stand mixer, combine butter, cream cheese, sugar, vanilla, and lemon-lime 7UP. Whip together for 2-3 minutes with a paddle attachment until smooth.
Place frosting in pastry bags with large star tip (Wilton 1M).
Place white sanding sugar on paper plate and dip top of cupcake in sugar.

If you do not want to make cream cheese frosting, you can easily buy a tub of vanilla frosting and use that as your base instead.
This will create a wonderful flavor of cherry & lime and will be the perfect baked good to have on your holiday table. Your guests may not be able to stop at just one!
