When I was younger I loved when the holidays arrived. It always meant that my grandmother’s house would be decorated to the hilt and treats were always at the ready for unannounced guests to stop by. Holidays were even more special because visits came with guests bearing food gifts to share. Everyone was welcome and before long, the dining room table overflowed with goodies. I have baked treats for as long as I can remember, so I was always called upon to bake something special for the holiday dinner. One year I created a peppermint poke cake that was gone before in made it around the table!
Simple Baking Makes Holiday Entertaining a Breeze
To bring back that special feeling my grandmother created, I decided this year I am going to follow her lead and dress up my dining room server as a dessert buffet to have it ready at a moments notice, and have easy-bake recipes like my 7UP® & Cherry 7UP® cupcakes.
I am obsessed with “soda cakes” because they are super easy and taste great. All you need is a box of your favorite white cake mix and your soft drink of choice; you can even use in a delicious cream cheese buttercream frosting!

- Set aside a space (like a small table or counter space) that you will use for food & beverage.

How to make 7UP Holiday Cupcakes
1 box white cake mix
1 bottle or can Cherry 7UP (measure out 12 oz.)
½ lb butter (2 sticks), room temperature
1 package cream cheese (8oz.), room temperature
1 lb. package confectioners’ sugar
1 tsp vanilla
2 Tbsp 7UP
Preheat oven to 350 degrees.
Grease and flour 2 cake pans.
In big bowl, Combine cake mix and 1 can (or measure out 12 oz.) Cherry 7UP. DO NOT ADD ANYTHING ELSE TO THE CAKE MIX.
Pour into paper-lined muffin cake pans and bake for 20 minutes or until toothpick tests clean.
Cool 10 minutes in pan then turn out to wire rack to cool completely.
In mixer, combine butter, cream cheese, sugar, vanilla, and 7UP. Whip together for 2-3 minutes until smooth.
Place frosting in pastry bags with large star tip (Wilton 1M).
Place white sanding sugar on Dixie Ultra® Holiday Plates and dip top of cupcake in sugar.
If you do not want to make cream cheese frosting, you can easily buy a tub of vanilla frosting and use that as your base instead.
This will create a wonderful flavor of cherry & lime and will be the perfect baked good to have on your holiday table. Your guests may not be able to stop at just one!
