When the temperature drops, it is time to pull out my easy French onion soup recipe. It is super simple to make and is full of rich, deep flavor that warms you up in no time.
2lbsyellow or Vadalia onionscut in half, then sliced
tsp.sugar
tsp.kosher salt
sprig of thymeoptional
4cupsbeef broth
1/2cupsherryoptional
grated Swiss or Gruyère cheese
French Baguettesliced
Instructions
In a Dutch Oven or stock pot, melt butter and olive oil together over medium-high heat.
On cutting board, cut onions in half, then slice.
Add onions and stir. Add salt and sugar. Stir so that onions do not stick to bottom of pan. Continue to stir until onions start to turn golden brown. Turn heat to low and cover with lid. Cook for 15 minutes. Check periodically and stir (every 5 minutes) to ensure onions are not sticking and are starting to caramelize.
Add Beef broth, sherry (optional) and thyme (optional). Cover with lid and allow to simmer for 20 minutes. The longer is simmers, the more the flavor will deepen.
Spoon soup into soup crock or bowl. Top with grated cheese and allow to melt. Serve with a slice of rustic French Bread.
