In most Italian households, Sunday means pasta day, so today we are sharing 4 easy Italian pasta meals! You can make one of our favorites on Sunday or add to your weekly meal plan; either way, get ready for some yum!
When it comes to a quick meal, there really isn't anything more simple than pasta. Most noodles can be cooked in 11 minutes or less and can be made as simple or complex as you like, all depending on your favorite “toppings”. When mixed with vegetables, cheese, tomatoes, and fresh garlic, one quickly learns why this is Italian comfort food.
4 Easy Italian Pasta Meals
Vegetable Pasta is easy one-pan meal and is a great way to use up those veggies that are ready to be tossed. Mix with a bit of chicken broth and mascarpone cheese, and you have a delectable meal full of color ready in minutes.
Quick Easy Pasta is a dish I came up with on the fly because I discovered we were out of red sauce- a Sunday staple! Using a can of cannellini beans (white kidney beans) adds a bit of protein and fresh tomatoes and basil add a nice pop of flavor over a bed of spaghetti.
Cacio e Pepe Pasta is my go-to Italian pasta comfort food. This consists of 3 ingredients; pasta, cheese & pepper. That's it. So simple and so incredibly delicious.
Thug Kitchen's Grilled Eggplant Soba Noodles is another healthy pasta dish we love to have in our meal planning rotation. Do you have this cookbook? If not, you should. There are some great recipes to try. This is a vegetarian version with grilled eggplant, sesame seeds and fresh herbs. So good.
