Now that I am coming off the food coma known as Thanksgiving, it is time to prepare for baking delicious cookies and treats to enjoy at home and share with friends and family. Being that today is National Cookie Day makes the timing perfect to share these cookie recipes!

Here is my fabulous recipe for Monster Chocolate Chips
My Nana's recipe for Sand Tarts that I started making as a young baker has been tried and true to make the Christmas season complete.
Pizzelles will also fill the house with the smell of Christmas…sorry…family recipe and I have been sworn to secrecy…
and my favorite: Gingerbread! I am not a fan of crispy gingerbread cookies, so I love that this recipe is on the soft side. I also like to make all different shapes. I've used this recipe for as long as I can remember…not really sure where it came from.
Gingerbread Cookie Recipe
- 1 cup brown sugar, packed
- 1/3 c shortening
- 1 1/2 cups dark molasses (I use Grandma's)
- 2/3 cup water
- 7 cups flour
- 2 tsp. baking soda
- 2 tsp. ground ginger
- 1 tsp. salt
- 1 tsp. allspice
- 1 tsp. cloves
- 1 tsp. cinnamon
In a large bowl, combine sugar, shortening, molasses and water. The mixture will look curdled-that's ok. In separate bowl, combine all dry ingredients, stir well. Stir dry ingredients into wet ingredients. Separate into 2 large dough balls (makes it easier to work with), wrap in saran wrap and chill in refrigerator for at least 2 hours or up to a few days.
When ready to bake, preheat oven to 350 degrees.
Dust counter or board with flour. Roll dough to roughly 1/4 inch thickness. With floured cutters, cut out people or other shapes. Place on a parchment lined baking sheet about 1-2 inches apart, depending on the shape (need room to grow!). Bake for 10-12 minutes, or just until small indentation is not present. Cool on wire rack completely. Enjoy plain or have fun decorating with frosting, raisins & candy.

We went to a Christmas Cookie party tonight....and someone brought Orange slices! There was a chewy chocolate chip cookie that was nice and thick with melty chocolate and a hit of oatmeal that totally won me over. ? Jill

I have never made gingerbread cookies from scratch. This one is going on the must make list!!! :) My neighbor makes Pizzelles every year and no one knows the recipe either!!!
