Easy Baked Blueberry Donuts With Glaze

When getting ready for breakfast, no need to run to get blueberry glazed donuts at Dunkin Donuts! Nope, you can make baked donuts from scratch right at home and enjoy them whenever you want without going to the donut shop!

I was always afraid to try making donuts at home because they always looked hard, but once I made my apple cider donuts, I realized how easy it really is! All you need are a few kitchen tools and soon you'll be making donuts every weekend!

Ingredients for Blueberry Donut Recipe

Start out with these ingredients and follow some of my helpful tips below.

  • Fresh blueberries– you can substitute with frozen wild blueberries too.
  • Vegetable oil– you can use canola oil, or coconut oil as a substitute.
  • Large eggs
  • Sugar– granulated sugar for the donut mixture and for the topping.
  • Salt– I always use Kosher salt
  • Baking Powder
  • Flour I always use King Arthur all-purpose flour because I think it creates a soft crumb to baked goods.
  • Butter– You can use salted or unsalted butter
  • vanilla extract
  • Powdered Sugar

Tools to make easy baked blueberry doughnuts

Having the right tools to make these delicious breakfast treats makes it so easy! In less than 20 minutes, you can have fresh warm blueberry donuts right out of the oven!

  • Start with a non-stick doughnut pan. I have one by Wilton and another by Norpro.
  • Silicone Pastry Brush– brush a light coating of vegetable oil in the pan if you don't have cooking spray.
  • Cooling rack– to cool your baked donuts before frosting or adding sugar coating.
  • Piping bags – to pipe batter into pans. You can use a spoon, but piping is a lot faster and less messy.

TIP: If you do not have piping bags, you can use a large ziplock bag to fill the donut wells easily. Put batter into the bag and cut off a corner before filling the donut batter.

How to make baked blueberry donuts

Blueberry cake donuts come together fast and really make the perfect donut to enjoy for breakfast. If you enjoy blueberry muffins, then you are in for a delicious treat.

First, you will want to preheat your oven to 350 degrees.

While your oven is preheating, get all your baking supplies together because this part will go quickly!

In a large mixing bowl, add the flour, salt, granulated sugar, and baking powder, and mix dry ingredients together.

In the same bowl, add wet ingredients to the flour mixture. This will be your milk, eggs, and vanilla. Now add the oil and stir.

Gently fold in blueberries.

Brush oil in donut pan wells.

With a spoon or piping bag, fill prepared donut pan wells 3/4 full. (It is much easier to use a pastry bag or zip lock bag for piping.)

Bake donuts for 9-10 minutes or until a toothpick comes out clean.

Remove from oven and place on a wire rack to cool completely.

When donuts are at room temperature, dust with powdered sugar or vanilla glaze.

How long can homemade donuts last?

These delicious blueberry donuts don't last very long in our house, but if there are some leftovers, fluffy cake donuts can be stored in an airtight container on the counter for up to 3 days.

Can I use a glaze topping for cake donuts?

Yes! You can eat these donuts any way you like! Try some of these suggestions for extra flavor:

Lemon Glaze– 2 cups powdered sugar, 1 teaspoon lemon zest, 1 teaspoon lemon extract, 1 Tablespoon of milk. Mix until combined. If you want a thinner glaze, add 1/2 Tablespoon of milk at a time until you reach the desired consistency. 

Vanilla Glaze – 2 cups powdered sugar, 1 teaspoon vanilla extract, 1 Tablespoon of milk. Mix until combined. If you want a thinner glaze, add 1/2 Tablespoon of milk at a time until you reach the desired consistency. 

Blueberry Glaze – 2 cups powdered sugar, 1 teaspoon vanilla extract, 1 teaspoon blueberry puree or blueberry extract, 1 Tablespoon of milk. Mix until combined. If you want a thinner glaze, add 1/2 Tablespoon of milk at a time until you reach the desired consistency. 

Place a piece of parchment paper or wax paper under a cooling rack. Dip the top of the donuts in glaze and set them on the rack to dry.

Ingredients

  • 1 1/4 cup all purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 2 Tablespoons coconut oil
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350 degrees. 
  2. In a large bowl, add flour, baking powder, salt, & sugar. Mix dry ingredients.
  3. Add in egg, milk, vanilla extract. Mix until combined. 
  4. Add in coconut oil and stir. 
  5. Add blueberries and fold in gently. 
  6. Place pastry bag in a pint glass and fold over top. Add donut batter into the bag, set aside. 
  7. Using cooking spray or silicone brush, oil donut pan wells. 
  8. Cut tip off disposable pastry bag (large enough for berries to exit) and fill donut pan wells 3/4 full. 
  9. Place donut pan on middle rack in oven. 
  10. Bake for 9-10 minutes. 
  11. ​Let cool for 1 minute, then remove from pan and let cool on wire rack. 
  12. Once doughnut cools, dust with powdered sugar or top with glaze. 

Notes

If you want to add glaze to donuts, here are some flavor options!

Mix until combined. If you want a thinner glaze, add 1/2 Tablespoon of milk at a time until you reach the desired consistency. 
Lemon Glaze

  • 2 cups powdered sugar
