One of our favorite summer salads is a Caprese Salad. Nothing beats fresh tomatoes & basil from the garden when paired with creamy mozzarella and balsamic vinegar. My mouth is watering just thinking about it!
What do you do when it’s not summer and you are craving that bit of deliciousness?
You get creative!
A few weeks ago, I was really jonesing for a caprese salad, but all the tomatoes in the produce section looked awful. Then I happened upon two beautiful little packages of sweet golden and red cherry tomatoes!
Which I thought would go perfectly on the fresh artisan bread I had just placed in my cart.
With a spring in my step, I came home and created a snack that was downright fantastic!

Caprese Toast Appetizer
1 loaf artisan bread
1/4 cup golden yellow tomatoes, cut in quarters
1/4 cup red cherry tomatoes, cut in quarters
2 large fresh basil leaves, sliced or torn thin
1 ball fresh mozzarella, sliced thin
drizzle of olive oil & Balsamic vinegar
pinch of kosher salt
Slice a 1/2 inch piece of bread and place on plate. If you would like to toast bread, do so on low setting. In a small bowl, combine tomatoes and drizzle of olive oil. Toss to coat. Slice cheese and place 1-2 pieces on top of bread. Top with tomato mixture. Top with basil & drizzle balsamic vinegar over top. Add a pinch of kosher salt. Enjoy!
