1box red velvet cake mix
2large eggs
1/3cupvegetable oil
1teaspoonvanilla extract
Powdered sugarfor rolling

Instructions
Preheat oven to 350°F. Line baking sheets with parchment paper.
In a large bowl, mix the cake mix, eggs, oil, and vanilla until a soft dough forms.
Scoop dough and roll into 1-inch balls.
Add 1/2 cup powdered sugar to a shallow bowl.
Roll each dough ball generously in powdered sugar.
Place on the baking sheet about 2 inches apart.
Bake for 9 to 11 minutes until the cookies are set and crackled on top.
Let cool on the baking sheet for 5 minutes, then transfer to a cooling rack.

Baking Tips: If cookie dough is too sticky, chill for 10-15 minutes. If the dough is still sticky, rub your hands with powdered sugar before rolling into balls.
