Lemon Crinkle Cookies
Easy lemon crinkle cookies made with cake mix. Soft, chewy cookies with powdered sugar crackle and bright lemon flavor.

Ingredients
- 1 box lemon cake mix
- 2 large eggs
- 1/3 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 teaspoon lemon zest
- Powdered sugar for rolling
Instructions
- Preheat oven to 350°F. Line baking sheets with parchment paper.
- In a large bowl, mix the cake mix, eggs, oil, lemon zest, and vanilla until a soft dough forms.
- Scoop dough and roll into 1-inch balls.
- Roll each dough ball very generously in powdered sugar.
- Place on the baking sheet about 2 inches apart.
- Bake for 9 to 11 minutes until the cookies are set and crackled on top.
- Let cool on the baking sheet for 5 minutes, then transfer to a cooling rack.
