Homemade Thin Mint Cookies are easy to make to enjoy any time of year. Chocolate, mint extract, and Ritz Crackers make this delicious no-bake cookie a snacking treat for all ages.

In microwave, melt chocolate chips in glass bowl using 30 second increments until chocolate is melted. *After melting chocolate, I found it would begin to harden – making it difficult to dip-so I added 1 tsp. Crisco in order to smooth it out.
Add peppermint extract and fold into melted chocolate. Be careful not to add too much-this extract is very strong.
Open a sleeve of crackers. Dip into chocolate; flip over with a fork to be sure entire cracker is covered. Remove with fork, scrape extra chocolate from bottom (with another fork) and place on a cookie tray lined with parchment or wax paper.
Place in refrigerator for 10 minutes to let chocolate set.
