Fresh Bruschetta Pasta is full of ripe summer tomatoes, fresh basil, mozzarella cheese and balsamic vinegar. Get extra flavor by cooking pasta in chicken broth!
Cook pasta according to directions in 2 cups chicken broth instead of water.
While pasta is cooking, chop tomatoes, mozzarella cheese and basil. Add to bowl. Add 1/4 cup olive oil and balsamic vinegar and toss.
In fry pan, heat 1 Tbsp. Olive oil and minced garlic. Cook until brown. Add Chicken broth cube (1/4 cup broth) and mascarpone cheese. Stir until melted.
Drain pasta.
Add pasta to bowl of tomato mixture, pour garlic sauce over top.
