Ingredients
Crust:
1 ½sticks of buttersoftened
½cuppowdered sugar
1 ½cupsflour
Filling:
1 8oz.cream cheeseroom temperature
½cupsugar
1tsp.vanilla
Fruit:
Whatever you like: Kiwistrawberries, grapes, blueberries, raspberries, blackberries, pineapple, peaches, etc.
Glaze:
1 ½Tbsp.cornstarch
½cupsugar
1cuppineapple juice
1tsp.lemon juice

Instructions
Crust:
In mixing bowl, combine butter and powdered sugar & slowly add flour. Mix until large crumbs form and stick together easily when squeezed together.
Grease pan lightly with butter and place piece of parchment paper on top. Pat crust into pan to edge. Bake in 325 degree oven for 10-15 minutes. Cool completely.
Filling:
In mixing bowl, combine room temperature cream cheese, sugar and vanilla. Mix on medium for 2-3 minutes until light and creamy. Be sure to scrape down sides.
Spread filling onto cooled crust, leaving ½ inch border of crust around the edge.
Choose the fruit you want to use. Slice whole fruits such as kiwis, strawberries and peaches in thin slices. Layer fruit on top of filling.
Glaze:
In small saucepan, cook sugar, cornstarch, pineapple & lemon juices until transparent. Cool completely. Drizzle over fruit (you may not need to use the whole pan) and chill.
