Easy black bean burritos are full of black beans, salsa, fresh chopped onion, garlic, and spices. If you have a can of black beans, a jar of salsa, and tortillas, this favorite vegetarian meal is ready to serve in less than 20 minutes!

Stir in beans (and liquid), 1/2 cup salsa, cilantro, chili powder & cumin; bring to boil.
Reduce heat to low and simmer 10 minutes. Stir occasionally so it doesn't stick to the bottom of the pan.
Spoon 1/4 cup of bean mixture into a flour tortilla.
Top with shredded cheese, sour cream.

My family likes to eat these right out of the pan, but if you want to enjoy warm bean burritos, then here is an extra step you can take to bake them into a cozy, cheesy meal: Prepare recipe as above until the bean mixture is cooked through.Preheat oven to 350 degrees.Grease an 8" square baking dish. Next, you will spoon 1/4 cup bean mixture into center of tortilla and roll.Put seam side down in the greased dish.Repeat until pan is filled with rolled burritos.Sprinkle the top with cheese.Bake 8-10 minutes, until cheese is melted.Serve with remaining salsa and sour cream.
