Chocolate-covered stuffed dates are the best healthy snack to enjoy when you have a sweet craving! Chewy dates that are stuffed with smooth peanut butter and covered in melted chocolate taste just like a healthy snickers bar! Dates provide a healthy source of vitamins and natural sweetness, dark chocolate is full of antioxidants, and nut butter is rich in healthy fats. If using fresh whole dates, make a slit on side of the date to remove the center pit.
Fill dates with smooth peanut butter.
Top each date with 2-3 peanut halves or chopped nuts.
Place filled dates on a tray lined with parchment paper and set aside.
In a small microwave-safe bowl, add mini chocolate chips and coconut oil. Cook for 30 seconds and stir. If chips have not melted, cook additional 30 seconds. Stir until chocolate is smooth.
With a spoon, drizzle melted chocolate over the stuffed dates.
Place the tray of dates in the refrigerator or freezer for 10-15 minutes, until chocolate sets.
Sprinkle with flaked sea salt or chopped nuts and enjoy!
Store in an airtight container or freezer bag for up to 1 week.
