Roasted Garlic Parm Shrimp is an easy and delicious recipe to serve at any gathering. Full of delicious flavor, this can also be made ahead for weekly meal planning.
Ingredients
3T.extra virgin olive oil
3-4clovesgarlicfinely minced
2t.Dijon mustard
1t.ground cumin
3T.Parmesan cheesefreshly grated
Sea salt and black pepperto taste
1½lbs.jumbo shrimppeeled and deveined
1½T.lemon juice
1/3c.fresh parsleyminced
Instructions
Preheat oven to 400°F and line a large rimmed baking sheet with parchment paper. Set aside.
Prepare the garlic shrimp seasoning by combining the olive oil, minced garlic, Dijon mustard, ground cumin, and grated Parmesan cheese in a large glass bowl. Season with salt and black pepper, to taste.
Add shrimp to the bowl and toss to combine. Transfer the seasoned shrimp to the prepared baking sheet and place in pre-heated oven to roast for 6 to 8 minutes, or until the shrimp are just firm and pink. Do not overcook.
Remove shrimp from oven and sprinkle with lemon juice and fresh parsley. Toss to combine when just cool enough to handle. Serve immediately.
