Super Easy Vegan Breakfast Parfait Recipe

Super easy vegan breakfast parfait uses dairy-free yogurt, steel-cut oats, and fresh berries. A healthy vegan or vegetarian recipe option for this breakfast will be a welcomed addition to start off your day!

I like to have recipes on hand that I am able to serve for vegan and vegetarian options, like this avocado black bean salsa, easy black bean burrito, and Caprese toast.

I needed more breakfast options, to go with our gluten-free strawberry mug muffin, and this breakfast parfait fits in perfectly!

When my kids were younger, I will freely admit to passing through the fast-food drive-thru on more than one occasion to grab a kid’s meal and toy.

I can assure you, it was 100% pure convenience. When our oldest began ordering her “Cheeseburger with NO MEAT,” I should have seen the foreshadowing of our meals to come.

We had a vegetarian in our midst. Fast forward 17 years and that is exactly the case.

We no longer go through the drive-thru and are always thinking up new recipes to have as options like this vegan breakfast parfait!

Toppings for parfait

When it comes to toppings for this breakfast parfait, the sky is the limit! I like fresh berries and nuts, but you can also try:

  • Mini Chocolate Chips– I really like cooking and baking with Enjoy Life brand chips, but I know Lily's is also very good. 
  • Chopped nuts– I like sliced almonds on this yogurt parfait, but you could top with cashews, walnuts, or a mix of your favorites. 
  • Granola– This would add a nice crunch alternative if you didn't want to add nuts. 
  • Maple syrup– Have a sweet tooth? A drizzle of pure maple syrup tastes great with steel-cut oats!

Ingredients needed for vegan breakfast parfait

  • Steel-Cut oats- You could use regular oats, however, I really like steel-cut oats. They are hearty, very filling, and taste amazing. 
  • Non-dairy yogurt– There are more and more yogurt options on the market. I like to use Silk Soy yogurt, but there are also Siggi's and SoDelicious that are coconut milk-based yogurt. 
  • Fresh berries- fresh berries like blueberries, strawberries, blackberries, and raspberries are wonderful as a topping. If you want different fruit, use your favorite! 
  • Almondssliced almonds taste really good with this yogurt parfait, but are totally optional.

Instructions for vegan parfait

A few simple steps are all it takes to put together this breakfast parfait recipe! 

  1. Cook steel-cut oats according to package directions.
  2. In a wide-mouth glass, place 1/3 of the cooked oats in the bottom of a glass.
  3. Add a few fresh berries on top of oat layer. 
  4. Scoop 1/3 container of Dairy-Free Yogurt Alternative (I used Black Cherry) and place over oats and berries. 
  5. Repeat layers of oats, yogurt alternative, and top with a few berries and sliced almonds.
  6. Dig in with your spoon and enjoy!

When it’s cold outside I want my breakfast to be warm, filling, and healthy. This vegan breakfast parfait really hits the spot!

  • Steel-Cut oats, cooked according to package directions 
  • Non-dairy yogurt, 1 single-serve container
  • Fresh berries- fresh berries like blueberries, strawberries, blackberries, and raspberries.  
  • 1 Tablespoon sliced almonds (optional)

Instructions

  1. Cook steel-cut oats according to package directions.
  2. In a wide-mouth glass, place 1/3 of the cooked oats in the bottom of a glass.

There is a very real part of me that still feels vegetarian . . . though I doubt I'll ever go back to those days. At my height of being a vegetarian, I tried to go vegan . . . but cheese. oh, cheese. I could never go without cheese.
