I don’t know about your house, but in our house, when the mercury rises during the dog days of summer, so do the cravings for ice cream! We l-o-v-e our sweet treat and I will confess, when temps soared over 100 degrees a few years ago, I actually served it for dinner. I know, I know, I’m a horrible parent for feeding my kids ice cream for a meal, but you know what? I serve healthy eats all day, every day, so this time I decided it’s okay to live a little!
My theory that dreadful evening was simple; no one should have to cook on days like that and I even took sympathy on the poor pizza places close by. Who wants to sling pies in and out of an oven in that heat? My husband was traveling and my day was long if you catch my drift, so off I went to the local ice cream store. Everyone got the chance to choose their own pint and we came home to the cool AC, grabbed spoons and dug in.
If my husband had been home, he wouldn’t have participated in our dinner-time ice cream shenanigans because he doesn’t really eat ice cream. Not for the fact that he dislikes it, but for the fact that the lactose in the dairy bothers his stomach. I have noticed the older I get, the more I shy away from soft ice cream for the same reason. It’s a real bummer-especially when that is one thing you look forward to during the summer.
