Summer Smoothie Snack

 

Well, it has come to my attention that it has been almost a month since the last post here!

What?! Ok…that will be easily fixed with a super yummy Summer Smoothie Snack recipe which I will share in moment…

Do forgive me. As summer has finally arrived, the household has been teeming with activity…

Final exams for our two high school students…

Our oldest graduated high school and with that came loads of family and friends staying with us for a few days. Not only were we preparing the house for company- ie: cleaning, painting and planting, we were also planning a graduation party for 100 guests and cooking for said guests! It was a bit like crazy town, but we made it through and had a wonderful time! I'll have more to share about our party menu in a future post, so stay tuned.

I also started a new part-time job at a local kitchenware store as the Cooking School Coordinator. Not only am I surrounded by fabulous kitchen gadgets, tools and accessories, I get to plan demonstration classes with fun food ideas with local chefs. It's pretty awesome.

So, what am I preparing these hot summer days? Truth is- I hate cooking in the summer! I tend to make a lot of salads, cook in my crockpot, eat a lot of yogurt and granola and fill up on smoothies!

Smoothies are one of my favorite things to make. They're easy, nutritious and are the perfect recovery food or snack. You can make them with veggies or fruit…or both! This sippable meal can be completely customized with whatever you like to eat and possibilities of mixtures are truly endless. I am known to just throw ingredients in a blender and see what happens. In fact, this recipe I'm going to share is a result of just that- mixing a little bit of this and a little bit of that. I'm typing this post on the fly so that I don't forget how I made it!

This came out a bit on the thick side which made it very filling. The flavor combo was balanced just right.

Summer Smoothie Snack

Ingredients

  • 1 cup vanilla almond milk
  • 1 5.03 oz container vanilla greek yogurt
  • 1 tbsp. almond butter
  • 1/2 cup raspberries
  • 1/2 cup blackberries
  • 1/4 cup blueberries
  • 1 medium banana

Instructions

  1. Place all ingredients into a blender.
  2. Blend on high 30 seconds or until completely combined.
  3. Pour in glass and enjoy!
