It is Girl Scout cookie season and the time of year when requests come from friends and family to help support sales of boxed cookies, and we say, “Sure, I can order a box or two!”
But, we all know that one or two boxes of our favorite Girl Scout cookies just won't do, so we hoard those mint chocolate cookies and place them in our freezers to last longer. Wait, is that just me?
Well, you can still support the cookie cause, but when supplies run low, you can grab your Ritz Crackers, chocolate chips, and peppermint extract and make this homemade thin mints cookie recipe!

Did you know you could make this favorite cookie flavor with just a few simple ingredients?
When I heard about this recipe, I was a bit skeptical, but after making them, I became a believer after tasting the final product. I had no idea that a Ritz cracker covered in a mint chocolate coating could taste so much like the real thing.
My son took a break from playing a game and after taking a bite of this crispy cookie, gave a big thumbs up and proceeded to clean the plate by removing stacks of cookies until it was bare.

- Ritz Crackers
- Peppermint extract or peppermint oil
- Crisco or coconut oil
- Semi-sweet chocolate morsels

How to make Thin Mint cookies with peppermint extract
You only need 4 ingredients to make this easy homemade thin mint cookies recipe! Most of the items are probably in your pantry and spice cabinet.
Instructions:
In a small bowl made of glass, melt chocolate chips and shortening or coconut oil in a microwave in 30-second increments until the chocolate is melted. Stirring after each 30 seconds, until smooth.
Add peppermint extract and fold into melted chocolate. Be careful not to add too much- this extract is very strong.
Open a sleeve of Ritz crackers.
Dip cookies (crackers) into chocolate; flip over with a fork to be sure the entire cracker is covered.
Remove with a fork, scrape extra chocolate from the bottom (with another fork), and place the cookies on a parchment-lined baking sheet.
Place the tray of cookies in the refrigerator for 10 minutes to let the chocolate set.
Remove and enjoy!
Recipe makes approx. 18 cookies.

- 1 ¼ tsp. peppermint extract
- 1 tsp. Crisco*

- In microwave, melt chocolate chips in glass bowl using 30 second increments until chocolate is melted. *After melting chocolate, I found it would begin to harden – making it difficult to dip-so I added 1 tsp. Crisco in order to smooth it out.
- Add peppermint extract and fold into melted chocolate. Be careful not to add too much-this extract is very strong.
- Open a sleeve of crackers. Dip into chocolate; flip over with a fork to be sure entire cracker is covered. Remove with fork, scrape extra chocolate from bottom (with another fork) and place on a cookie tray lined with parchment or wax paper.
- Place in refrigerator for 10 minutes to let chocolate set.
