I love taking tours of working farms because you get to know the folks who work so hard to bring food to our tables. But, have you ever taken a tour of the meat case in your local grocery store?

For years, I stayed clear of the meat counter and case because I was too afraid to pick the wrong cut of beef.

I missed out on so many good recipes due to this fear, but confidence is slowly working its way into my shopping habits.

Why? Because I started asking questions and found out that my local butcher or grocery meat counter butcher is not only friendly but eager to help me with any and all of my questions!

Long gone are the days of trying to figure out what cut I should buy for my recipe.

Now I just share what I want to make, how many people I am serving and I’m directed to exactly what will make my meal a success.

One thing I learned on a recent meat case tour is beef cuts can be listed as different names even though they are the same cut.

What do I mean by that? For example, our recipe today is for Flank Steak.

Did you know that this can also be referred to as London Broil, Jiffy Steak or Flank Steak!

No wonder I’ve been so confused!

Don’t be discouraged when shopping your meat case. I encourage you to ask questions and you will be on your way to a tasty meal!

How do you cook Flank Steak in Cast Iron Pan?

  • Flank steak or London Broil is a lean cut of beef, meaning it does not have much fat.
  • You will find this cut to have an oval appearance and contain elongated muscle fibers.
  • To make this tender and delicious, it is best to marinate for at least an hour before cooking.
  • Cooking on medium-high heat 8-10 minutes per side until reaching a temperature of 145 degrees on the instant-read thermometer and allowing it to rest before cutting will give this steak a beautiful crusty outside and will remain juicy inside.

Tips For Cooking Flank Steak on the Grill

  • Place steak on grid over medium, ash-covered coals.
  • Grill, covered, 11 to 16 minutes (over medium heat on a preheated gas grill, 16 to 21 minutes) for medium-rare (145°F) to medium (160°F) doneness, turning occasionally.

Cutting tip: Cut Flank Steak against the muscle grain and you will learn this is indeed a tender cut of meat.

What you need to make Garlic Lime Flank Steak

1 pound Flank Steak
4 cloves garlic, minced
1/2 cup olive oil
1/2 cup white wine vinegar

1/2 tsp garlic salt
1 tsp salt & black pepper
1 tsp garlic powder
1 tsp basil
2 Tbsp parsley
1 Tbsp dried minced onion

juice of 1 lime

How to Make Garlic Lime Flank Steak

  1. Add all ingredients into a large resealable bag.
  2. Mix all ingredients by kneading softly.
  3. Place in fridge to marinate for at least 1 hour.
  4. Preheat cast iron pan with 1 Tablespoon olive or vegetable oil over medium-high heat, until pan is hot..
  5. Place steak in pan and cook 8-10 minutes per side. Temperature should read 145 for medium-rare.
  6. Remove from pan and allow steak to rest 5-10 minutes before slicing.

Instant Read Thermometer– I like using this to ensure everything is cooked to the proper temperature.

Cast Iron Frying Pan– this will ensure a nice crust and juicy steak.

Ziplock Bags– Perfect for quick marinades.

Measuring cups and spoons– Helps to measure your ingredients. I like the rectangle shape of the measuring spoons to reach into small spice jars.

This delicious garlic-lime flank steak is full of tangy lime, fresh garlic and will be super juicy when served for dinner! A great meal for weekday or weekend and ready in minutes.

Prep Time 5 minutes
Cook Time 20 minutes
Additional Time 1 hour 5 minutes
Total Time 1 hour 30 minutes

Ingredients

  • 1 pound Flank Steak
  • 4 cloves garlic, minced
