Friday Coffee Talk Giving Thanks as this is probably the last week we will have our morning coffee with pumpkins. We have our winner for our Lets Get Stuffed giveaway and I'll share that soon…
First we are going to recap our week.
I've been trying to play catch-up and get-ahead-because-of-the-holiday and it hasn't worked in my favor at all. Just when I think I have taken a step forward, I'm falling six steps back; at least that's what it feels like. I need to make sure I pay more attention to the small victories, because they are there and they deserve their moment to shine.
For instance; I received GREAT news this week- I can start running again! I can only start with a mile- which to me is a “That's it?!”, but as I just mentioned…it's the small victories and I need to take it and be thankful. I'm sure by the time I'm deep into winter running, I will look back and wish I could do only a mile when the temps are freezing!
Another victory this week? I successfully made another fantastic meal using the Roast Perfect app from Certified Angus Beef® . If you haven't downloaded this app yet, do it. It really is my go-to app for cooking beef. This week I learned how to tie a roast by watching a quick video in the tip section of the app. I've never done that before and it was a lot easier than I thought!
I roasted as per the timer in the app too and it was perfect. I made fresh cut fries and sweet potato fries and at the last minute, decided to make poutine and it was out of this world! I'll type up the recipe and share soon. I want to take some pretty pictures first for the recipe. 🙂
I also had success baking; I made gluten free chocolate chip muffins and gluten free chocolate cupcakes and a gorgeous bundt cake that will be on the blog on Sunday! Make sure you come back for that because it's super delicious!
So I guess this week wasn't so bad after all!
