Easy Black Bean Burritos Recipe

Easy black bean burritos are full of black beans, salsa, fresh chopped onion, garlic, and spices. If you have a can of black beans, a jar of salsa, and tortillas, this favorite vegetarian meal is ready to serve in less than 20 minutes!

But, there is nothing faster than our bean burrito recipe. It is super easy and delicious!

Every recipe box should have a vegetarian dish ready to go at a moment's notice. One of my favorite things to make for non-meat eating friends is this homemade black bean burrito. It is a “stick to your ribs” kind of meal and tastes even better as leftovers! 

You can dress up burrito filling with all your must-have toppings like cheese, sour cream, jalapenos, rice, and so much more! The best part about this recipe is it only takes one pan to make it! So grab your favorite pan, whether it's a cast iron skillet or a non-stick frying pan, and let's cook! 

Ingredients needed for easy black bean burritos

Medium onion-finely chopped so that it cooks down quickly in your pan
Garlic– minced fine. If you have fresh garlic, great if you have jarred or dried minced that will work too! 
Black Beans- This recipe calls for a can of undrained black beans. The liquid will cook off to create a thick filling! 
Salsa- You can use mild, medium, or hot salsa! I'm a wimp, so I always use mild salsa.  
Cilantro – fresh or dried works well in this dish. If you are allergic to cilantro, you can substitute parsley instead. 
Chili powder to get an authentic burrito flavor, do not skip this spice ingredient. 
Cumin– do not skip this spice ingredient either! Combined with the chili powder it makes the flavor really pop!
Vegetable oil- You can use canola or olive oil; whatever you have on hand. 
Tortillas- I use flour tortillas for this because they hold up better than corn, but you can use corn if you like those more.
Cheddar cheese- I like cheddar cheese in this burrito, but have also used Monterey Jack cheese with tasty results. 
Sour Cream- (optional) This is optional, but I like having sour cream in my burritos.

How to make bean burritos

You will be surprised how fast this bean burrito recipe comes together! Use the filling for a new spin on taco night! 

  1. In medium skillet, heat oil over medium heat. This can be a non-stick frying pan or a cast iron skillet. Whatever you have. 
  2. On cutting board, chop onion and mince garlic.
  3. Add onion and cook until tender.
  4. Add garlic and cook 1 minute.
  5. Stir in beans (and liquid), 1/2 cup salsa, cilantro, chili powder & cumin; bring to boil.
  6. Reduce heat to low and simmer 10 minutes. Stir occasionally so it doesn't stick to the bottom of the pan. 
  7. Spoon 1/4 cup of bean mixture into a flour tortilla. Top with shredded cheese, sour cream. 

Alternate Serving Suggestions

My family likes to eat these right out of the pan, but if you want to enjoy warm bean burritos, then here is an extra step you can take to bake them into a cozy, cheesy meal: 

  1. Prepare recipe as above until the bean mixture is cooked through.
  2. Preheat oven to 350 degrees.
  3. Grease an 8″ square baking dish
  4. Next, you will spoon 1/4 cup bean mixture into center of tortilla and roll.
  5. Put seam side down in the greased dish.
  6. Repeat until pan is filled with rolled burritos.
  7. Sprinkle the top with cheese.
  8. Bake 8-10 minutes, until cheese is melted.
  9. Serve with remaining salsa and sour cream.

Topping ideas

I baked these burritos the first time I made them then never again. My family likes to fill the flour tortilla with cheese, sour cream, and fresh chopped cilantro. But there are other toppings you can add too: 

  • Avocado would be creamy and delicious as would a heaping spoon of guacamole! 
  • Sliced jalapenos or sweet pickled jalapenos would bring the heat up a notch.
  • Salsa Verde or hot sauce would add a bit of spice too!
  • Cooked rice.
  • Shredded lettuce, chopped tomatoes, or roasted corn would be good too! 

If you have any beans leftover, you can add them to nachos or make quesadillas too!

Ingredients

  • ½ medium onion, finely chopped
  • 
2 cloves garlic, minced

  • 1 (19oz.) can Black Beans, undrained

  • 1 cup Salsa

  • 2 TBSP Cilantro (fresh), chopped (if dried, 1 TBSP)

  • 1 tsp Chili powder

  • 1 tsp Cumin

  • 2 TBSP vegetable oil

  • 4 Burrito size tortillas 

  • ¾ Cup shredded cheddar cheese

  • Sour Cream (optional)
