When my kids were younger, I will freely admit to passing through the fast food drive-thru on more than one occasion to grab a kid’s meal and toy. I can assure you, it was 100% pure convenience. When our oldest began ordering her “Cheeseburger with NO MEAT,” I should have seen the foreshadowing of our meals to come. We had a vegetarian in our midst. Fast forward 17 years and that is exactly the case. We no longer go through the drive-thru and are always thinking up new recipes to have as options like vegan breakfast parfait!
I was recently given the opportunity to try Silk’s dairy-free yogurt alternative, a brand-spanking-new product. This is not a yogurt; it is cultured soy, providing 6g of plant-powered protein per serving, made with real fruit, packed with a good source of calcium, vitamin D and is delicious! I was really surprised how creamy and smooth this turned out to be- especially for being dairy-free! This would work so well as a base for smoothies and I can’t wait to try it out with my next workout recovery drink. But for today, I wanted to make a filling breakfast to enjoy with my oldest before she went back to college.
When it’s bone-chilling cold outside I want my breakfast to be warm, filling and healthy, so this week, I’ve been on a steel oats kick. Because of this daily morning ritual, my daughter and I got the idea to make vegan breakfast parfaits. We cooked up a batch of steel cut oats, grabbed a few fresh blackberries and sliced almonds and in less than 10 minutes were enjoying a completely satisfying start to our day.
This is a great recipe for you to try and so easy to put together.
Vegan Breakfast Parfait
Cook steel cut oats according to package directions.
In a large glass, place 1/3 cooked oats in bottom of glass.
Scoop 1/3 container of Silk Dairy-Free Yogurt Alternative (I used Black Cherry)
Top with blackberries.
Repeat layers of oats, yogurt alternative and top with a few berries and sliced almonds.
Dig in with your spoon and enjoy!
