Save Money with Homemade Granola

What I like about this granola recipe is that it is a great base for any flavor combination your heart desires. I tend to make with dried apricots and yellow raisins because that is what my kids like the best. The last batch I made included dried cherries, cranberries and blueberries PLUS the apricots and raisins and I liked it a lot. It is truly as customizable as you want to make it. Try adding vanilla or cinnamon…maybe dried figs or dates…hazelnuts or pumpkin seeds or all the above! The possibilities are endless.

The other fabulous perk? It is so much more economical to make at home rather than buying in the store. Why pay almost $5.00 for roughly a quart of cereal when you can make a gallon for less than half of that (based on Ziploc storage measurements)?  PLUS, you know exactly what is going in your cereal!

It is delicious warm out of the oven, served with milk or enjoy with yogurt and fresh fruit!

The Recipe: Homemade Granola

2 cups Old-Fashioned oats (not the quick-cook)

1 cup shredded coconut

½ cup wheat germ

1 ½ cup coarsely chopped nuts (1/2 c each: almonds, pecans, walnuts or whatever you like)

½ c sunflower seeds (optional-could add pumpkin seeds too)

1 tsp salt

1 can sweetened condensed milk

¼ cup canola oil

1 cup yellow raisins (or regular if you prefer)

¾ cup dried apricots chopped

Preheat oven at 300 degrees.

In a large bowl, combine first six ingredients. Stir in condensed milk. Add oil and stir until thoroughly mixed. Spread mixture on shallow pan (I use a large cookie sheet). Bake at 300 degrees for 1 hour, stirring every 15 minutes. Remove from oven and while still warm, stir in dried fruit. Let cool and store in Ziploc or airtight container. Makes 8 cups.

As this recipe takes an hour, I usually make 2 sometimes 3 batches. It does not last long in our house as it is consumed not only as breakfast, but also a snack!

Maybe you would like to try a cold Muesli recipe? I have a perfect one for you that I obtained from the kind chef of The Drake Hotel in Chicago.

Another delicious treat that does not last long around here!

Have fun making this…and I would love to hear about all the options you created!

That sounds soooo delicious.

My sister just sent me a peanut-butter protein bar recipe a few minutes ago.

I swear between those bars and that granola I think I could be happy forever.

And never cook again...

p.s. I thought about you on my run today - swear I'm not creepy - it's just that it's #nationalrunningday and I hope you're feeling good these days!

I love granola... the only downside to it is the amount of sugar and calories in it. Of course homemade is much better because then I can put in all the things that I like best!

I know! This is why I like to make it at home...you can put in or leave out what you like/don't like! The condensed milk is sweet, so it works well in this recipe.
