Fresh Strawberry Basil
When we moved into our upstate NY home many years ago, the previous owner had a small garden off the side of the deck full of cherry tomatoes, which came in handy when making our BLT stuffed tomatoes!
I decided to move the tomatoes to planters near our patio furniture, and the kids opted for the newly empty garden space to become a strawberry patch.
So, we grabbed 12 plants from the nursery up the road and planted them in the ground. When the following June arrived, we were blessed with huge, beautiful berries…so many in fact, we had a hard time keeping up with them!
Strawberry Recipes
We used strawberries in everything; salads, strawberry pulp quick bread, whip creams, and frostings; but we really enjoyed making strawberry lemonade and another this new favorite, strawberry basil spritzers.
They are non-alcoholic, so the kids loved their “Fancy Drinks” as they used to call them. I think they also liked that I would spruce up their glasses with an added strawberry and fresh basil leaves for garnish and sometimes a little drink umbrella.
How to make strawberry syrup pulp
Want to give this a try? Great!
- Start with cleaned and hulled berries. You can use a paring knife or something like this strawberry huller, to remove green tops and the center core.
- Next, you want to pulse the strawberries in a blender, I LOVE my Ninja Blender– easy to use and clean up. I use this for our celery juice recipe!
- Strain out the juice using a sieve – this is the sieve I use and it's perfect for washing berries and draining pasta too! Be sure to reserve the pulp for later use!
- Cook the strained berry juice on the stove in a saucepan with sugar, lemon, and fresh basil leaves.
- Strain out the solids and place the strawberry syrup in a jar to cool. (I like to use wide-mouth mason jars for this.)
Helpful tools for strawberry basil drinks
It helps to have useful kitchen tools on hand to make this non-alcoholic drink with basil and strawberries.
- Huller– a strawberry hullers come in many varieties. This huller works on strawberries and tomatoes too!
- Strainer or sieve is something I use all the time. It is lightweight and works for draining and even sifting flour or dusting sugar.
- Blender– I do love my Ninja blender! It works great when making this drink, as well as our PB&J smoothie! I've used it for blending up butternut squash soup too.
- A saucepan is for cooking your berries and infusing the basil into the strawberry syrup.
- Widemouth mason jars are perfect for storing your syrup for up to 3 weeks in the refrigerator. The jars can also double as drinking glasses too!
How to create a strawberry basil spritzer
Here are the three easy steps to making this refreshing drink full of strawberry and basil! So good!
- Pour strawberry syrup into a glass.
- Add sparkling water to fill the glass to the rim.
- Mince a fresh basil leaf and sprinkle on top of the drink.
- Stir and add a berry for garnish.

Strawberry Basil Spritzer
Homemade strawberry syrup infused with basil mixed with sparkling water creates a delicious refreshing beverage for all ages to enjoy. A perfect non-alcoholic drink to enjoy all year long!
Ingredients
- 1 pound Florida strawberries, trimmed
- Juice of half a lemon
- 1/2 cup loosely packed basil leaves
- 1 cup sugar
- Carbonated water
Instructions
- Juice strawberries with a blender by adding berries and pulsing until smooth. Strain liquid through a sieve, pushing juice through with a spatula. This can be accomplished by pressing and stirring. Keep remaining pulp and set aside for separate use.
- Pour strawberry juice into a liquid measuring cup. Add water to reach 1 cup if needed.
- Pour into a small saucepan with the sugar, lemon juice, and basil leaves.
- Heat over medium heat until boiling; turn the heat down to simmer and continue to cook 5 minutes stirring frequently. Remove from heat and let cool.
- Strain syrup through a sieve into a clean container or mason jar to remove solids.
- To serve:
- Spoon 2 Tbsp of strawberry syrup into an 8-ounce glass, top with carbonated sparkling water (Pellegrino), and stir. Taste and add more syrup if desired. Top with minced basil.
- The syrup can be refrigerated for up to three weeks.
