Are you looking for a dessert that will have anyone close by grabbing a fork to dig in? This recipe for easy fruit tart looks like it took hours to make but in truth, it takes less than hour to put together. It's time to keep that box of brownie mix in the pantry and put a little pizzazz on your dessert plate!

Summer is just around the corner and soon it will be time to make one of my favorite desserts using a great combination of summer berries, citrus, grapes and exotic fruits, allowing them to show off all their beautiful colors and shapes. One dessert in particular that would always catch my eye at the bakery counter were the mini fruit tarts. They looked to me as if the poor baker behind the counter spent all night making the delicate looking tartlets because they were so spectacular. I would order one to make sure they felt their work was not done in vain- hey, I was only trying to do my fair share of back patting for a job well done.

Now, I steer clear of the confection counter because I came up with my own easy fruit tart! It doesn't have the typical custard cream filling but rather a fluffy cream cheese topping that is just as good and it doesn't need the fancy pan either…I make it on a flat round pizza pan. I bake a simple crust, top it with the cream cheese filling, fruit and a simple glaze and it's good to go. It really is that easy!

This would be a fun tart to make to accompany Snow Cone Cupcakes for Memorial Day weekend or July 4th by using blackberries, blueberries, raspberries and strawberries! How pretty would that look?!

Easy Fruit Tart

Ingredients

Crust:

1 ½ sticks of butter, softened
½ cup powdered sugar
1 ½ cups flour

Filling:
1 8oz. cream cheese, room temperature
½ cup sugar
1 tsp. vanilla

Fruit:
Whatever you like: Kiwi, strawberries, grapes, blueberries, raspberries, blackberries, pineapple, peaches, etc.

Glaze:
1 ½ Tbsp. cornstarch
½ cup sugar
1 cup pineapple juice
1 tsp. lemon juice

Instructions:

Crust:

In mixing bowl, combine butter and powdered sugar & slowly add flour. Mix until large crumbs form and stick together easily when squeezed together.

Rub a little butter on pizza pan and place piece of parchment paper on top. Pat crust into pan to edge. Bake in 325 degree oven for 10-15 minutes. Cool completely.

Filling:

In mixing bowl, combine room temperature cream cheese, sugar and vanilla. Mix on medium for 2-3 minutes until light and creamy. Be sure to scrape down sides.

Spread filling onto cooled crust, leaving ½ inch border of crust around the edge.

Choose the fruit you want to use. Slice whole fruits such as kiwis, strawberries and peaches in thin slices. Layer fruit on top of filling.

Glaze:

In small saucepan, cook sugar, cornstarch, pineapple & lemon juices until transparent. Cool completely. Drizzle over fruit (you may not need to use the whole pan) and chill.

This looks soooo good. I need to find a time to make one and figure out what for. I know I could make it just for us, but then we'd (okay, I'D) eat the whole thing!

The crust takes 10 minutes...you can cook the glaze while the crust bakes and let both cool at the same time. The thing that takes the longest amount of time is cutting all the fruit. I was generous with taking an hour to make...but it probably doesn't take that long. It's perfect for ANY time!!
