Cranberry White Chip Cookies

Ever have a craving for something and it just won't go away? It sets into your mind then lingers on your taste buds waiting to be fulfilled?

I had such a craving last weekend for a cranberry white chocolate chip cookie like you would not believe. I bought the ingredients during the week, knowing that baking would commence come hell or high water! When the time came, I was almost giddy putting the batter together and my mouth began to water. My daughter was even excited to try them. This is a type of cookie that I have never made before, so I was a bit nervous how they would come out.

They were actually quite heavenly…my only suggestion would be to use a half bag of white chocolate morsels. This could just be my taste preference as I am not a huge white chocolate fan (unless it is surrounding a pretzel or peanut butter cup!). For this particular batch, I did use a full bag.

The Recipe:

Cranberry White Chip Cookies

2-1/2 cups all-purpose flour

1 tsp baking powder

1/4 tsp salt

1/8 tsp baking soda

1/2 cup butter or margarine (1 stick), softened*

1-1/3 cup sugar

2 large eggs

1 tsp.vanilla extract

1 bag white chocolate morsels**

1 bag (6 ounces) dried cranberries***

Preheat oven to 350 degrees. Line baking sheet with parchment paper. Meanwhile, combine flour, salt, baking powder and baking soda in a bowl and set aside. Mix butter, vanilla and sugar until creamy. Add eggs one at a time and mix until combined. Add dry ingredients slowly and mix thoroughly. Stir in white chocolate morsels** and craisins. Drop by tablespoon on parchment paper and bake for 10-12 minutes. Cool on a dinner plate for soft cookies, wire rack for a crisper cookie.

Notes**

* I used Blue Bonnet margarine (my favorite for baking cookies)

** I found using entire bag of morsels too sweet and would use only half next time.

*** I used Ocean-Spray Craisins for this recipe.

A very good cookie! Although, my son decided that a “normal” cookie be made, so I also made a batch of Chocolate Chips!! 🙂

These look yummy. I love cranberries!

Side note: Did you know that there's no such thing as "white" chocolate? It's just what people call it, it's actually white candy with the consistancy of chocolate so people call it chocolate. I know a lot of silly trivia...just saying.

I'm going to make these tomorrow using dark chocolate chips. Do you that will be good? I think so. I'll let you know!

I do like craisins but white chocolate is a misnomer, there is no chocolate in it. I hope your son is willing to share. X David
