I am a total foodie. I can watch the Food Network channel for hours…and I am not kidding! I love to learn how to mix this with that to create a new flavor…or how incredibly easy it can be to make a delicious home-cooked meal with just a few simple steps. I grew up with one of the greatest cooks in the world….my Dad. I credit him for giving me the appreciation and love of good food. We were always the eager guinea pigs at the dinner table waiting for the new concoctions that would knock our socks off. When asked what it was, he would simply answer “It's (insert main dish here) a la Anthony!”

I thought I would share a recipe that I overheard at a recent cooking show from my neighbor. I must confess that I always seek her dish out at any neighborhood function because I know my taste buds will dance in delight! So, when I heard her take on a breakfast sandwich, I just had to try it. It got rave reviews and really is a great way to start the day!!
So easy and delicious! Enjoy!

Easy Breakfast Cups

Easy Breakfast Cups

Easy breakfast cups will be a quick breakfast treat! Made in a muffin tin, this egg, bacon, and cheese is baked in a bread cup and is a great grab and go start to the day.

Prep Time 15 minutes
Cook Time 20 minutes
Total Time 35 minutes

Ingredients

  • 6 slices of Bread, I used whole wheat
  • Butter or Margarine, I used margarine
  • 6 eggs Shredded Cheese, your choice-I used Monterey Jack/Cheddar mix
  • 2 strips of cooked bacon, optional

Instructions

Preheat oven to 350 degrees. Meanwhile, prepare Breakfast cups:

  1. Butter each slice of bread on one side only. Stuff into ungreased muffin cups, butter side UP.
  2. Crack egg into each bread cup well. ** I also made two of these with just egg whites***
  3. Top with shredded cheese and bacon.
  4. Bake in oven for 20 minutes or until egg is cooked.

My father also taught me a lot about cooking, including methods and the love of yummy tasty food. I miss him on Christmas mornings. This looks yummy and simple. I have some little girls in my life who might enjoy making these. ...not long to Mother's day. And Grandmothers are mothers too.

Yum! I do a similar recipe using crescent roll dough, sausage, eggs and cheese. The family loves it.
